Chicken tikka masala

This week we’re making chicken tikka masala

However, I chose not to cut my chicken into chunks. I love how it came out regardless.

Also forgive my insufficient photos this week. I won’t have a detailed step by step documentation😔

Ingredients

Chicken

Tomatoes

Tomato paste

Spices

Ginger garlic paste

Chilli

Method

Marinate the chicken in spices plus garlic ginger paste for about 30 mins. (You can skip this step though and add your spices directly when cooking, that’s what I opted for coz time.. )

*In a pot, fry your onions till they’re translucent. (Great meals have onions😂)

*Add the garlic ginger paste

*Blend the tomatoes and tomato paste. (You could as well cook your tomatoes but let them cook to a paste then add tomato paste)

*Add the chicken plus spices. (If you had marinated the chicken don’t add more spices)

*Let the chicken cook in medium heat then low heat. This will make it maintain the masala thickness without getting burnt. (Do not let spirit of Mumbi deceive you to add water)

>If you have cooking cream, feel free to add some<

At this point, the chicken is ready, it should look like this

We had ours with rice

You could use naan, chapo, mashed or potato wedges as an accompaniment as well.

I am highly vouching for naan👌😋 I’ll post a naan recipe soon.

Honey soy chicken served with spring onion rice

Y’all know my love for chicken haha. My first post definitely had to be chicken related.

How to make honey soy chicken!

Recipe!!

Ingredients

*Chicken( I used the 1kg QMP assorted chicken pack)

*Honey( 2 table spoons)

*Soy sauce( 2 bottle tops of dark soy sauce) however, when using light soy sauce you can use more.

* Rosemary( I really love rosemary aki, especially coz I get them from mum’s kitchen garden💃🤣)

*Chicken masala

*Mixed spice

*Garlic ginger paste

*Spring onions

*Salt

*Chilli flakes

(Did y’all know you can easily make chilli flakes at home instead of buying? That’s what I do. If anyone is interested, hit me up for instructions) I’ll attach my socials apo chini

Side note; I usually eyeball my spices so sina specific measurements 😅

Procedure

In a bowl;add chicken masala, mixed spice, honey, soy sauce, rosemary, salt and chilli flakes(chilli is optional) then finally the ginger garlic paste. Mix them well, ensure there are no spice balls floating on top.

Make small incisons on the chicken, this allows for the marinade to get into the chicken. Add the chicken to the marinade.

You can either cover it and let it marinate overnight in the fridge or if you’re making a quick meal, cover it and let it marinate in the fridge for 30 mins.

When you add the chicken

I usually add the spring onions as a topping before putting the chicken in the oven

Oven instructions

I prefer preheating the oven whenever I’m using it. Temp 180° for 10 mins

After adding the chicken, I adjusted the temp to 220° and set the timer to 50 mins

After 20 mins turn the chicken, let it cook for another 20 mins then turn it again. The last 10 mins smear the remaining marinade on the chicken and let it cook for those 10 mins.

Rice recipe

The rice was a quick fix; I just boiled rice when it was almost ready, I added the spring onions and let it cook.

Btw do y’all wash your rice before cooking? Growing up, my mum insisted we should always wash rice, I have maintained the trend haha. Lemme know what y’all prefer😊

My first guest was my brother.

He however said the chilli was abit hot haha. In my defense I asked how hot he wanted it lol.
