Mango salsa

Heeey loves! Trust y’all have been well.

Today we’re making a mango salsa salad.

Ingredients

*Mangoes(should be properly ripe)

*Bell pepper (red or green) I used green ones coz I didn’t have red ones lol, use either but I recommend red ones coz they’re sweeter.

*Red onions

*Coriander

*Tomatoes(optional, gotta be one that’s not too ripe)

*Lemon/lime

*Chilli

Method

Soak diced red onions in hot salty water.

In a bowl, add all ingredients together and mix them up.

Add the lemon juice

Your mango salsa is ready. Took at most 10 mins to prep.

Let it rest in the fridge for 30 mins to blend in the flavor or in the freezer for 15mins.

Have it with any meal you want, goes really well with chicken meals and tacos or wraps.

BATTERED SMOKIES

Battered smokies

Heeey loves, it’s yet another week to try a new recipe.

These are battered smokies; y’all could use sausages, frankfurters or viennas.

This was the first time I made these. I was to make corndogs but I realized I didn’t have any cornmeal or corn flour sooo we altered the snack choice lol. I’m satisfied with the results, I have several things to change next time I’ll make them though.

Next time I’ll make corn dogs haha.

What you’ll need

The smokies were precooked in the microwave

Method

Precook the smokies for a few minutes; you could do this either in the microwave, shallow frying them in oil or boiling them.

Paste

Make this paste using:

*1 cup of flour(could be more depending on the consistency of the paste)

*1/2 a tablespoon of baking powder

*1/4 spoon of cinammon powder

*1/2 a cup of brown sugar

*1 cup of milk(could be more depending on the consistency of the paste)

Combine all these in a jug. It has to be a jug or long glass.

Once it’s properly runny, add the smokies.

When putting the skewers in the smokies make sure they don’t go all the way in, preferably halfway.

Make sure the smokies are well coated.

Frying

Fry them in medium heated oil. Turn the heat to medium low.

I’d advise y’all to deep fry, not what I did. Ensure the smokies are fully covered by the oil.

This will avoid the paste from rubbing off in some parts like mine did. We live and learn though. 😊

Repeat this process till all smokies are cooked.

See the paste rubbed off in some parts😭 lakini ni sawa tu.

You could have them this way.

Alternatively, make a dip to go with them.

Dip

I made my dip using natural yogurt, mustard and honey.

I genuinely eyeballed the measurements. This dip goes really well with meaty pastries 👌

Natural yogurt, mustard and honey.

If you can get greek yogurt, use that instead of natural yogurt.

This dip is really yumm, I totally recommend it.

I honestly liked how they turned out, the batter wasn’t bleeh adding cinammon was definitely a plus.

Planet Barbeque restaurant review

Planet Barbeque

Hey loves❤️ I hope y’all have been well.

This week, we are doing a restaurant review.

I like restaurants popping up on my IG page, it helps me choose where I can go.

We went to planet Barbeque.

They were kind enough to send me their menu beforehand.

Y’all like seeing the menu before going to a restaurant? I personally prefer it that way.

Location and cuisine

It is in parklands 3rd avenue

It is an indian restaurant.

Ambience

It’s an outdoor restaurant.

Food

We had 2 meals.

The periperi chicken and pousin fries. The 2nd meal was the chooza chicken and masala fries.

This chicken was very well deep fried. The crunch on it was amazing. The periperi flavor was wholesome. The marinade was properly infused in the chicken.

The fries were also really yumm. Pousin chips are always a win👌

I’d definitely recommend this meal.

The one having this meal had it with a regular milkshake. It’s really a regular milkshake as they put it, it’s not as thick and creamy as I’d prefer.

The meal was 800/=

The milkshake was 250/=

Chooza chicken and masala fries

This meal was IT! For me

I loved every bite of it.

It was very well grilled👌 It had amazing flavor combination. The spices used were genuinely very well marinated. It was such a moist juicy piece of chicken. If you like spicy meals, this one is really a must have.

I actually choose this meal coz the photos I saw of it were so inviting.

The masala fries were well sauced and very filling.

I had this with the special milkshake. The waiter said it has some sort of nuts in it. He wasn’t sure; when I was having it, it tasted more of a pistachio almond milkshake. I didn’t mind the milkshake. However, if you like a lot of sugar in your shakes; this is not it for you haha. My partner didn’t like it one bit 😂

The meal was 800/=

Service

The service was really good.

The waiter was keen to explain the different meals on the menu for us. The meal didn’t take so long to be served. Approximately 10 mins which is okay.

Have you seen the salad? They gave us that for free. Topnotch customer service if you ask me👌

General rating

I’d rate the restaurant 9/10

I’ll definitely be back to try more meals soon.

Whiskey wings

Whiskey wings

Hey loves!! It’s been a whiiile 2 weeks lol exams took the better part of me. I trust y’all have been well though😊

As promised, today we’re making whiskey wings.🥃

Ingredients.

Method

I first washed my wings and cut them to make wingletts.

This was followed by making the marinade. (watch my IG reel for a detailed marinade)

The marinade was basically made of:

1/2 a cup of brown sugar

1/4 cup of black and white whiskey

1/4 cup of masturd

Soy sauce(I eyeballed this lol)

Honey about 2 tbsp

I added the wings to the marinade. ( I used 1/2 a kg of wings)

Marinate this for 2hrs or 1hr 30 mins minimum

After 2hrs,preheat the oven for 10 mins.

Add the wings to the oven tray and cook for 30 mins at 190°

After 30 mins; flip the wings, add more marinade to the wings and cook for another 30 mins.

The wings will be ready after 1 hr. But the hour should be divided into 2. So basically 30 mins on each side.

Wings are readdddyyyy.

Serve these with Lyonnaise potatoes, potato wedges or fries.

Simple meals

Hey loves, I’m back to the simple meals series. I have prepared 2 simple meals.

1) Minji(peas) stew

This is one of my favorite stews btw haha yes spirit of Mumbi👌👌

Recipe

Potatoes

Carrots

Peas

Beef

Capsicum

Tomatoes

Onions

Dhania

Spices(preferred spices or none at all)

Method

Preboil the peas

Preboil the beef (optional, I always preboil my beef)

In a pot, fry your onions to your liking; add the ginger garlic paste and cook for a few seconds.

Add tomatoes and tomato paste. Add your preferred spices plus salt as well.

When the tomatoes are well cooked, add your potatoes. Cook this for 5 mins.

Add the preboiled beef, peas and carrots and cook for a further 5 mins.

Add the capsicum and dhania, let this cook for 1 min.

The peas stew is ready.

Serve this with rice or chapatis.

2) Beef potato curry

This could also be called Irish stew. It’s an Irish traditional curry.

They make it using lamb, mutton or beef.

Growing up, this was a staple in our household and I’ve clearly carried on with the tradition.

Beef

Potatoes

Carrots

Capsicum

Tomatoes

Onions

Spices(preferred spices) or none at all

In a pot, fry onions to your liking. Add the tomatoes and spices. Cook till they’re well done.

Add the potatoes and cook for 5-7mins.

Add the carrots and preboiled beef.

Let this cook for 3 mins or there about, then add the capsicum.

The curry is ready. Have this with rice or chapati.

These are 2 very simple meals.

Chocolate fudge cake

Hey amigos❤️

I trust y’all have been well😊

This week we’re baking a chocolate fudge cake. I actually baked 2 this week lol. One for my mum’s birthday the other one for the blog.

Ingredients

*Flour( I used 1 and a half cups) measure flour according to the number of people who’ll eat the cake.

*3/4 cup of cocoa powder

* 1 cup of sugar

* 1 cup of milk

* In 3/4 cup of hot water add 1tsp of coffee

* 1 tbsp of baking powder

* 1 tsp of baking soda

*Vinegar

*2 eggs

* 1/2 a cup of oil

*Vanilla essence 1 tsp (you can skip this)

Method

* Mix the ingredients together; you could use the wet ingredients and dry ingredients separately method or like I did, just mix them all together🤭

*Preheat your oven for 10 mins at 175°c

*Dust your baking pans or you could alternatively use parchment paper

*Add your cake mix to the baking pans

*Bake at 175°c for 40 mins

Cake 1 (peep the results of not sifting the flour properly, regardless we move😅🤭)
Cake 2

The frosting recipe

Ingredients

*Cocoa powder

*Evaporated milk

*Butter 2 tbsps

* 1 tbsp of flour

* 1/2 a cup of sugar

Method

* Once your milk has evaporated; lower the heat to medium low, add sugar, flour and cocoa powder, let this continue simmering for a few minutes until it thickens.

* Turn off the heat, add your butter and let it melt as you keep stirring.

It should look like this

* The frosting is ready.

*Slice your cake into layers. Add the frosting on each layer as you pile it up.

Masala potato wedges

Masala potato wedges

I trust you’re well? I hope y’all had an amazing week filled with good food and vibes😊

I’ve been missing chips masala, that prompted me to make these masala potato wedges.

Ingredients

Potatoes

Tomato sauce, tomato paste, capsicum and spices of your choice. However, if you don’t like spices you don’t have to use them.

Plus dhania and blended tomatoes.

Method

When making potato wedges, I use 2 methods. The oven method and this method I’m about to explain.

So in this method, I first slightly boil the wedges. By slightly I mean at most 2 mins. This is because I will deep fry the potatoes for about 5-7 mins per bunch depending on the level of crunch I need.

When all potatoes are fried, set them aside and make the sauce.

Fried wedges.

Sauce

We’ll need blended tomatoes, the spices, tomato paste, tomato sauce, dhania, salt and capsicum

Tomato puree, dhania and capsicum

In a pan, add the tomatoe sauce, paste, spices and tomato puree to simmer.

Let this simmer for about 2 mins. Keep stirring to prevent it from getting burnt as we’re NOT adding water,we need the thick consistency.

Add the veggies i.e the dhania and capsicum

After adding the veggies, add the fried wedges immediately and ensure they’re well coated in the sauce. I did this in bunches to ensure the sauce is well distributed.

Repeat this step till all your wedges are coated. Garnish using dhania. Be generous with the dhania garnish😅😅

Final result

Serve and enjoy this with sausages, smokies or chicken.

This is a perfect addition to your Sunday brunch as well.

My guest this week was Eve. She insisted that I’m making her fat😂😂

Her review: “I really like the masala wedges, the sauce used is really yumm. A perfect blend of sweet and spicy.”

Tip: Add extra chilli to make the masalas hot if you like extremely spicy food. I added the chilli when serving coz not everyone in my family likes chilli, but the cayenne gave it the proper amount of sweet and spicy that Eve mentioned.

Pork stir fry

It’s been a whiiiiillllleeee, 2 weeks to be precise🥺

Habari yenyu? I hope y’all have been well.

This week, we’re making stir fry pork 💃💃 y’all loved the chicken stir fry, I hope you’ll try this one too.

Ingredients

Plus pork of course 🤣 I preboiled it.

Method

*Fry onions to your liking

* Add tomatoes, rosemary and the spices. (I used garam, paprika and cayenne)

Let this cook for a few seconds

*Add the preboiled pork and mix to enable the pork to absorb the flavor.

Let this cook for 5-8mins.

*Add the capsicum

Let the capsicum cook for 20secs to maintain the crunch, add the soy sauce as well
Garnish with spring onions

Pork is ready😋😋

We had this with rice and Eve’s perfectly steamed cabbage😋😋

Meat pies

Meat pies😋

Hey loves

I trust your week was amazing ❤️

This week we’re making meat pies! 💃💃

Ingredients

>Flour

>Minced beef

>Sausages

> 1 egg

> Water or milk

>Margarine or butter

Method

How to make the dough:

*Add flour according to the number of pies you want to make. (you could measure using a cup)

*Add some salt

*Add margarine

Flour, salt and margarine

*Mix these properly then add water. The water used MUST be cold. If you’ll use milk, refrigerated milk is preferred.

*When the dough is ready, wrap it with cling film and put it in the fridge to rest for 30 mins.

Wrap it and put it in the fridge for 30 mins

Meat filling

*Use minced meat and sausage meat.

*Using a fork, mix them till they properly combine.

*In a cooking pot, fry onions until they are translucent then add the meat and your preferred spices. Cook for 10-12 mins.

Alternatively, heat oil in a pan, add your meat; let it cook for about 5 mins minutes then add the finely chopped onions and let them cook for a further 5mins.

*Once the meat is cooked, let it cool.

Let the meat cool.

*After 30 mins get the dough out of the fridge and roll it out. Cut it into preferred shapes. (I used squares)

*Fill the meat on one cut dough slice and cover with another.

*Use a fork to bind the 2 pieces and also create the pattern.

This is just for decor purposes si must lol😂

*Repeat this for all pies.

Preheat oven for 10mins at this point

*Make the eggwash using an egg and 1 tablespoon of water. (If you don’t like eggs use 2-3 spoons of water so as to dilute the egg kabisa)

*Using a brush, apply the egg wash to all pies.

*When all pies have been eggwashed, place the baking tray in the preheated oven.

Bake them for 40 mins at 180°

*After 10 mins apply another layer of egg wash and let them continue baking.

This week we’re making chicken tikka masala

However, I chose not to cut my chicken into chunks. I love how it came out regardless.

Also forgive my insufficient photos this week. I won’t have a detailed step by step documentation😔

Ingredients

Chicken

Tomatoes

Tomato paste

Spices

Ginger garlic paste

Chilli

Method

Marinate the chicken in spices plus garlic ginger paste for about 30 mins. (You can skip this step though and add your spices directly when cooking, that’s what I opted for coz time.. )

*In a pot, fry your onions till they’re translucent. (Great meals have onions😂)

*Add the garlic ginger paste

*Blend the tomatoes and tomato paste. (You could as well cook your tomatoes but let them cook to a paste then add tomato paste)

*Add the chicken plus spices. (If you had marinated the chicken don’t add more spices)

*Let the chicken cook in medium heat then low heat. This will make it maintain the masala thickness without getting burnt. (Do not let spirit of Mumbi deceive you to add water)

>If you have cooking cream, feel free to add some<

At this point, the chicken is ready, it should look like this

We had ours with rice

You could use naan, chapo, mashed or potato wedges as an accompaniment as well.

I am highly vouching for naan👌😋 I’ll post a naan recipe soon.
